Any baking tips?

I am pretty new to cooking so I don’t have much experience. I was just wondering if there are any tips or ways to avoid a dry top when baking. I’ve recently tried baking ziti and macaroni and cheese and both times the top layer of the pasta gets dry and kind of hard. Should I cover it? Any advice would be really appreciated…thanks!!!
